Undi/ Pundi

Undi / Pundi / rice dumplings

Undi is one traditional breakfast dish of coastal region which is infamous for no fault of its own. You can see young people using the phrase ‘Pundi beyiduvudu’ or if you ask any konkani person about days breakfast they may reply saying ‘Unde baayl undi’ in a funny way.

I have not prepared this myself and documenting moms recipe here. Preparing undi does not require any preparation on the previous day. If you have about 1hr in the morning you can prepare this. Also useful when there are few guests for breakfast as it tastes good when hot and even when it is cooled. Also you can pair it with anything- curry, chutney, chutney powder, jaggery syrup, soye choornu, Coconut oil or just eat as it is.

Ingredients required-

  1. Rice rawa – about 750grms
  2. Coconut- 1
  3. Oil – 2-3tsp
  4. Mustard seeds -1/2tsp
  5. Curry leaves – 2strands
  6. Urad dal – 1tsp
  7. Methi seeds-1/2tsp
  8. Salt to taste
  9. Water about 1.5 ltrs

Method of preparation-

  • Grate the Coconut
  • In a pan take oil, mustard seeds, curry leaves, urad dal, methi seeds
  • Once mustard is spluttered add Coconut.
  • Also add water and salt to taste
  • Once water boils add rice rawa and starts mixing
  • Keep mixing on medium flame till it comes together
  • Now make small balls and press slightly in the center when it is still slightly hot.
  • Keep the steamer on gas. Once it is hot, steam these balls for about 20min.

Kulitha Ramdonu / horsegram idli

This is one of my personal favorite konkani breakfast recipe which mom usually makes on Sundays as we get more time to enjoy it in Different forms – hot hot directly from pedavan, after cooling a bit and evening ramdana usli. I love it in all the possible ways. Since it has horsegram it is good for winters as it is heat in nature.

Ingredients required –

  1. Urad dal – 250grms
  2. Horse gram – 250grms
  3. Rice rawa – 750 grms
  4. Salt to taste
  5. Water

Method of preparation –

  • Soak the urad dal overnight
  • Next day grind the urad dal with washed horsegram( it is better to grind it in wet grinder )
  • Take the rice rawa add salt to taste and add little water till it is soaked.
  • Once the batter is smooth and fluffy (takes about 20min) transfer it to same vessel as that of rice rawa. Mix them all well.
  • Keep the steamer on gas and add water. Keep it for boiling.
  • Keep a banana leaf for lining and pour the prepared batter over it.
  • Steam cook for about 20min
  • Serve it hot with coconut oil.

Urad and Green Moong Dosa(Udid mooga Polo)

Urad Moong dosa/ Udid Mooga Polo

It is amazing to see the varieties of dosas we have and the little variations which all together gives a new dosa with amazing color, texture and taste. I have been looking for dosa without rice. When my mom made this last week I instantly decided to note down recipe and try it. It can be prepared during fasting days as well. Also it is a no fermentation dosa!

Ingredients-

  1. Urad dal – 1/2 cup
  2. Green Moong – 1/2cup
  3. Water
  4. Salt
  5. Oil for frying

Method of preparation

  • First soak equal amount of urad dal and green moong over night or atleast 3-4hrs.
  • After that grind them to fine batter
  • Add required amount of water and salt to taste.
  • Fry on dosa tawa, on medium heat by applying oil
  • This takes time to cook and have to be very careful while frying. But dosa will be soft and fluffy, very tasty.
